The street food is safe in Uzbekistan due to the strict control by Sanitary & Epidemiological Stations in every District. Like in Tashkent there are 12 Districts and every district’s sanitary & epidemiological station is responsible for street food and staff working there have, in a compulsory way, to have sanitary books and they should have to check their blood test for HIV and other tests including for even hepatitis and etc. Except that at random checks by sanitary doctors, the staff sometimes that do not follow those strict rules make to shut down their eateries and pay fines, not only sometimes, it may end up with the prohibition to continue to work. Except that these street food entities at the initial period should have to get special licenses from different entities. Dear Charles, you are welcome to Uzbekistan and get taste of our delicious food of different types: palov (osh), you call it pilov, shurpa (soup), manti (dumplings), chuchvara (another type of dumpling) and many other types of food and delicious sun burnt sweet fruits, especially our grapes (hundreds of types and names. Plov (,also known as Osh,) Is one of the main dish which has different recipes along the territory of the country As you may see it's (usually) served in a big plate (lagan), from which several people eat, I know it sounds not really hygienic, especially if you are European, but we were eating like this every week in my family and everything is ok. Tandir (,Special Uzbek Oven,), ,where the physics laws don't work It's primarily used for cooking bread and Somsa (bread with meat inside). You can often meet it in Choyxona(tea room) where you can actually eat most of traditional food. Before Tandir was also used for heating houses, but nowadays I doubt there are households that do it. Choyxona If you want to try Uzbek food you better go to Choyxona rather than tourist-oriented restaurant, 99% chance they don't speak English there so maybe better go with a local. People in Uzbekistan don't go really often to restaurants, but they do go into CHOYXONA, they are cheap and cook good. But better ask an advice about which Choyxona is good, you can be unlucky to visit some fading one. Tradition of drinking hot green tea in summer midday and say “It's hot today!” The tradition comes from past of course. Bring samples with you and quote the prices and try to sign a deal with not just one but few businessmen. I am sure no one can give you the correct map how to export your foodstuff. There are cheap hotels here which you have to pay AED 250 per day. Book a hotel online and stay for a week . You can get a tourist visa for Dubai in your home country.
